Bread guide

2-minute read The Komáromy Pékség team

What do sourdough, rye, wholemeal or seeded mean in the name of a bread? We show you, using our own breads.

Sourdough, rye or seeds appear in the names of several of our breads. In this guide we have put together what these words mean and which of our breads you will find them in. You will find our breads on the Bread page; the wild sourdough breads and Diási Pékmester kenyér also belong to our speciality breads.

“Kovászos” and “kovászolt”

We use the words “kovászos” and “kovászolt” (sourdough) only for breads that really are made with sourdough. Under the Magyar Élelmiszerkönyv (Hungarian Food Codex), sourdough (kovász) is “a pre-dough made from part of the flour to be processed, yeast or starter culture, and water, then matured”, so it may contain yeast too.

Wheat sourdough bread comes in 0.5 and 1 kg. You can read more about our sourdough breads in our article Our sourdough breads.

Wild sourdough

Our wild sourdough breads, Wild sourdough bread and Wild sourdough rye bread (both 0.75 kg), belong to our speciality breads. Wild sourdough bread also contains rye flour; Wild sourdough rye bread is made with 40% rye.

Durum sourdough

Diási Pékmester kenyér (0.75 kg) is made with durum sourdough; ingredients: wheat flour, durum sourdough, yeast, salt, water. It keeps for 3 days.

Its name, too, keeps the place where we bake it. You can read about our products with local names in our article Products that are local even in name.

Rye-mix bread and rye bread

Under the Magyar Élelmiszerkönyv (Hungarian Food Codex), “rozsos kenyér” (rye-mix bread) is bread made with at least 30% rye, and “rozskenyér” (rye bread) is bread made with at least 60% rye.

That is why our bread made with 40% rye is called “Vadkovászos rozsos kenyér” (wild sourdough rye-mix bread) and not rye bread. Gyenesi kenyér is made with 50% rye, so it is a rye-mix bread too.

The share of rye in our breads
Bread Rye
Gyenesi kenyér 50%
Wild sourdough rye bread 40%

Wholemeal

In our texts we use the word “wholemeal” when the product contains wholemeal flour. In our range, that is Wholemeal wheat bread (0.5 kg).

Seeded

We use the words “seeded” and “pumpkin seed” when the seeds really are in the product. Of our seeded breads, Korn bread and Pumpkin seed bread also contain rye flour.
